Waffles of queijo

I had presented you a long time ago the 
pão de queijo
 (see my recipe HERE). For a while now in Brazil, we have been seeing these salted waffles with cheese. They are naturally gluten-free thanks to the tapioca starch. They are ready to cook in a few minutes and are ultra crispy and very soft inside… A delight! 

For a dozen waffles of queijo:
  • 275g of tapioca starch
  • 250ml of semi-skimmed milk
  • 100g of semi-salted butter
  • 1 egg of 60g
  • 50g of parmesan cheese
  • 75g of grated Emmental cheese

I’m doing a little reminder, even though I’ve already talked about it several times. This is tapioca starch which is sometimes called tapioca flour. However, it is really a starch and you can find it in Asian grocery stores and in some organic stores. When you press the package, it should crunch like snow or cornstarch…

Place the cornstarch and salt in a bowl or in a KitchenAid type food processor.
Pour the milk and put the butter in a saucepan.

Melt over low heat.

Pour into the starch while mixing.

Add egg and cheeses and mix again.

Heat your waffle iron and pour in two tablespoons of batter. 

Close the waffle iron and turn it over. Here we see the dough halfway through the cooking process.
You can also make large waffles! 

They must be golden brown.

To be enjoyed immediately!
