Muesli Cake

This muesli cake is a real treat! It is however made without flour, sugar or fat. But with all the dried fruits it contains, it is very rich! It is perfect for breakfast or snack. I find it totally addictive, as it smells like bananas and the consistency is perfect. A big thank you to Dona Arlene, a Brazilian mother who lives in Aguaí and whom I know well, for her recipe that I love and who agreed that I share it here with you. To my great pleasure because it is a cake that I will make often!

Pour un cake de 26 cm :

  • 480g banana flesh (5-6 bananas)
  • 3 eggs
  • 170g dried apricots
  • 85g of prunes
  • 85g of nuts
  • 100g of almonds
  • 75g of raisins
  • 150g of oat bran
  • 135g of oatmeal
  • 8g of baking powder

Instructions :

Mash the banana flesh with a fork.

Pour into a container.

Add the 3 eggs and mix well.

Chop the dried apricots.

Pour into the container and do the same for the prunes.

The same goes for nuts and almonds.

Don’t forget the raisins!

Mix well then add with the oat bran (on the left in the picture) and the oat flakes.

Finish with the baking powder. Mix carefully.

Pour into the greased pan and smooth the top with a spoon.

Bake at 155°C for 1h-1h10.

Turn out and let cool.

As always with cakes, it will be much better the next day.
