Hazelnut and Vanilla Financiers

A financier deliciously flavored with vanilla and almond powder, topped with roasted hazelnuts. A classic revisited for our greatest pleasure! These financiers will be perfect as accompaniment to a sorbet or a fruit salad.  


Recipe for hazelnut financiers:
-155g of powdered sugar
-100g almond powder
-25g of flour
-105g of egg white
-1 vanilla bean
-150g of soft butter
-200g of peeled hazelnuts

Put the almond powder, flour and powdered sugar in a bowl.


Mix well and sift as needed. 



Add the 105g of egg whites. 


Open the vanilla bean and scrape the inside with your thumb. 


Add vanillin and mix well.


Put the butter in a small saucepan. 



Bring to a boil over moderate heat. The butter will foam. 


When the butter no longer foams and begins to smell nutty, add it by straining it into the batter. 


Mix immediately. 




Put the hazelnuts on a paper. 



Hit them with the bottom of a pan. We only want to break them, not grind them into powder.



Put the dough in the financial moulds (or in another form!).



Sprinkle with crushed hazelnuts. 



Put in the oven for 15-20 minutes at 180°C.



Turn out and cool on a wire rack. 



Serve with fruit salad or sorbets!
