Chocolate and roasted almonds fondant (without flour)

I like really at times to return to the simplicity, because it very often gives excellent results. While helping the « Queens » cook one day, we made a chocolate cake. The customer had specified that he wanted a very moist, melting cake and above all, without flour. We developed the recipe a bit on the fly and it turned out really delicious! So today I’m giving you this recipe where roasted almond powder is a good substitute for flour. 

Recipe for chocolate almond fondant:
-3 eggs
-125g powdered sugar
-100g of dark chocolate
-70g of milk chocolate
-180g of butter
-50g almond powder
Melt the butter and chocolate in a double boiler or microwave oven.


Place almond powder in a small pan.


And lightly toast it. Let cool.


Mix eggs and powdered sugar. 


At the electric drummer, it will be easier. You must beat for at least 5 minutes.


Add butter and chocolate. 


Whisk for another 2 minutes. 


Add the toasted almond powder.


Pour into a 20X20cm pan lined with parchment paper. 


Bake at 200°C for 12-15 minutes. 


Let cool completely and chill for 1 hour before unmolding. 


Then cut into squares! 


Enjoy!
