Carrot Orange Cilantro Salad

Right now, I feel like alternating freshness and more wintery recipes. But this salad is not really a recipe, rather an idea to make quickly at home to vary the pleasures and eat vegetables. I will have some time again to cook dishes with sauce, well crispy pies and reassuring desserts. So let’s take advantage of this salad with carrots, coriander and orange zest to take a little break!

Salad recipe for 4 people:

-8 carrots 
-1/2 bunch of fresh coriander
-1 orange (zest and juice)
-3 tablespoons of olive oil
-salt, white pepper

Wash and peel carrots well.



You can choose to grate them or cut them into very thin slices. 




Finely chop the coriander. You will recognize my faithful chopper bought in Casablanca…! 






Combine carrots and cilantro.




Add the olive oil.




Zest half of the orange. 


Orange juice. 




Mix well. Add salt and pepper to taste. 



It’s ready! It will be even better after two or three hours in the fridge…
